Apple Rice Pudding With Raisins

Ingredients

  • 2 lbs apples, peeled, cored, and sliced
  • 1/2 lb rice
  • Rind of 1/2 lemon or 1 piece cinnamon stick
  • 4 oz sultanas (golden raisins)
  • Sugar to taste
  • 1 oz butter
  • Juice of 1 lemon (if apples are not sour)
  • 3 pints water

Method

  1. 1 Boil rice in 3 pints water with lemon rind or cinnamon stick.
  2. 2 Add sliced apples, sultanas, butter, lemon juice, and sugar.
  3. 3 Simmer gently for 30 minutes or until tender, adding water if too dry.
  4. 4 Remove lemon rind before serving.
