Apple Rice Pudding With Raisins
Ingredients
- 2 lbs apples, peeled, cored, and sliced
- 1/2 lb rice
- Rind of 1/2 lemon or 1 piece cinnamon stick
- 4 oz sultanas (golden raisins)
- Sugar to taste
- 1 oz butter
- Juice of 1 lemon (if apples are not sour)
- 3 pints water
Method
- 1 Boil rice in 3 pints water with lemon rind or cinnamon stick.
- 2 Add sliced apples, sultanas, butter, lemon juice, and sugar.
- 3 Simmer gently for 30 minutes or until tender, adding water if too dry.
- 4 Remove lemon rind before serving.
