Apple Raisin Pecan Coffee Cake

Ingredients

  • 1 cup tart apples, cored, peeled, and chopped
  • 1 cup sugar
  • 1/2 cup dark raisins
  • 1/4 cup chopped pecans
  • 2 teaspoons vegetable oil
  • 1 teaspoon vanilla extract
  • 2 large eggs, beaten
  • 1 1/2 cups all-purpose flour, sifted
  • 2 teaspoons baking soda
  • 1 teaspoon ground cinnamon

Method

  1. 1 Preheat oven to 350°F. Lightly oil a 13x9x2 inch pan.
  2. 2 In a large bowl, combine apples, sugar, raisins, and pecans. Mix well and let stand for 30 minutes.
  3. 3 Stir in oil, vanilla, and beaten eggs. Sift together flour, baking soda, and cinnamon.
  4. 4 Stir the dry ingredients into the apple mixture about 1/3 at a time, just until moistened.
  5. 5 Turn batter into the prepared pan. Bake for 35-40 minutes. Cool slightly before serving.
