Apple Puff Pancake

Ingredients

  • 1 cup flour
  • pinch of salt
  • 2 cups milk
  • 3 eggs, well-beaten
  • butter for pan
  • peeled and sliced apples
  • butter for dotting
  • sugar
  • grated lemon peel or spice (optional)

Method

  1. 1 Sift 1 cup flour with a pinch of salt into a bowl.
  2. 2 Stir in 2 cups milk and 3 well-beaten eggs until smooth.
  3. 3 Pour batter into a shallow buttered pan.
  4. 4 Top with peeled, sliced apples; dot with butter and sprinkle generously with sugar.
  5. 5 Add grated lemon peel or spice if desired. Bake at 350°F for 45 minutes.
  6. 6 Serve hot.
