Apple Layer Cake With Lemon Filling
Ingredients
- 1 1/2 cups sugar
- 1/2 cup butter
- 1/2 cup milk
- 2 1/2 cups flour
- 3 eggs, whites and yolks beaten separately
- 2 teaspoons baking powder
- 2 apples, grated
- Zest and juice of 1 lemon
- 1 egg
Method
- 1 Beat butter and sugar until creamy.
- 2 Add egg yolks and milk, then mix in flour.
- 3 Fold in beaten egg whites gently.
- 4 Divide batter into two pans and bake at 350°F.
- 5 Cook grated apples with lemon juice and egg until thickened.
- 6 Cool filling, spread between cake layers.
