Apple Jelly

Ingredients

  • 1 lb apples
  • 1 pint water
  • 1 lb loaf sugar
  • 1 lemon, juiced

Method

  1. 1 Wash and cut up the apples. Place them in a pot with 1 pint of water for each pound of apples.
  2. 2 Boil the apples in the water until tender.
  3. 3 Pour the mixture into a jelly bag and let it drain well.
  4. 4 For each pint of juice, add 1 lb of sugar and the juice of 1 lemon per quart of liquid.
  5. 5 Boil the liquid, skimming carefully, until the jelly sets when cold (test with a drop on a plate). This takes 2-3 hours.
