Apple Custard

Ingredients

  • 6 large cooking apples
  • Zest of 1 large lemon
  • 1 ½ oz granulated sugar
  • 3 large eggs
  • 1 pint heavy cream or whole milk
  • Cinnamon, for seasoning and garnish

Method

  1. 1 Peel, core, and quarter the apples. Place in a double boiler with lemon zest and cook until tender.
  2. 2 Press the cooked apples through a sieve to create a smooth purée (approx. 3/4 pint). Stir in sugar and let cool.
  3. 3 Beat eggs until light. Gradually stir eggs into milk, then alternately mix in the apple purée and a pinch of cinnamon.
  4. 4 Pour mixture into a pudding dish and bake at 350°F for 20 minutes.
  5. 5 Serve cold, dusted with sifted cinnamon and sugar.
