Apple Custard
Ingredients
- 6 large cooking apples
- Zest of 1 large lemon
- 1 ½ oz granulated sugar
- 3 large eggs
- 1 pint heavy cream or whole milk
- Cinnamon, for seasoning and garnish
Method
- 1 Peel, core, and quarter the apples. Place in a double boiler with lemon zest and cook until tender.
- 2 Press the cooked apples through a sieve to create a smooth purée (approx. 3/4 pint). Stir in sugar and let cool.
- 3 Beat eggs until light. Gradually stir eggs into milk, then alternately mix in the apple purée and a pinch of cinnamon.
- 4 Pour mixture into a pudding dish and bake at 350°F for 20 minutes.
- 5 Serve cold, dusted with sifted cinnamon and sugar.
