Apple Custard Tart With Puff Pastry
Ingredients
- 18 apples, peeled, cored, and chopped
- 1 cup water
- 1 tsp ground cinnamon
- 2 whole cloves
- 1 lemon peel strip
- moist sugar to taste
- 4 egg yolks
- 1 egg white
- 4 oz unsalted butter
- 1 pinch freshly grated nutmeg
- 1 lemon, zested and juiced
- 1 package puff pastry
Method
- 1 Combine apples, water, cinnamon, cloves, and lemon peel in a stew-pan. Cook over low heat until apples are very soft.
- 2 Sweeten with sugar to taste, then press the mixture through a sieve into a bowl. Discard solids.
- 3 Stir in egg yolks, egg white, butter, nutmeg, lemon zest, and lemon juice. Beat until well combined.
- 4 Line a pie dish with puff pastry. Pour in the apple mixture and bake at 350°F for 30 minutes.
