Apple Custard Tart With Puff Pastry

Ingredients

  • 18 apples, peeled, cored, and chopped
  • 1 cup water
  • 1 tsp ground cinnamon
  • 2 whole cloves
  • 1 lemon peel strip
  • moist sugar to taste
  • 4 egg yolks
  • 1 egg white
  • 4 oz unsalted butter
  • 1 pinch freshly grated nutmeg
  • 1 lemon, zested and juiced
  • 1 package puff pastry

Method

  1. 1 Combine apples, water, cinnamon, cloves, and lemon peel in a stew-pan. Cook over low heat until apples are very soft.
  2. 2 Sweeten with sugar to taste, then press the mixture through a sieve into a bowl. Discard solids.
  3. 3 Stir in egg yolks, egg white, butter, nutmeg, lemon zest, and lemon juice. Beat until well combined.
  4. 4 Line a pie dish with puff pastry. Pour in the apple mixture and bake at 350°F for 30 minutes.
