Apple Custard Pie With Meringue

Ingredients

  • 6 good-sized apples
  • 1 oz. butter
  • 3 eggs
  • juice and rind of 1 lemon
  • 3/4 cup milk
  • sugar to taste
  • pie crust

Method

  1. 1 Steam or bake apples until tender, then press through a sieve while hot.
  2. 2 Add butter to the apple puree and let the mixture cool completely.
  3. 3 Beat egg yolks, then mix in milk, sugar, and lemon juice and rind.
  4. 4 Combine the egg mixture with the cooled apples and butter.
  5. 5 Line a dish with paste, fill with the mixture, and bake in a quick oven (425°F) for 30 minutes.
  6. 6 Whip egg whites stiff with a little sugar, heap over the pie, and set in the oven.
