Apple Custard Pie With Meringue
Ingredients
- 6 good-sized apples
- 1 oz. butter
- 3 eggs
- juice and rind of 1 lemon
- 3/4 cup milk
- sugar to taste
- pie crust
Method
- 1 Steam or bake apples until tender, then press through a sieve while hot.
- 2 Add butter to the apple puree and let the mixture cool completely.
- 3 Beat egg yolks, then mix in milk, sugar, and lemon juice and rind.
- 4 Combine the egg mixture with the cooled apples and butter.
- 5 Line a dish with paste, fill with the mixture, and bake in a quick oven (425°F) for 30 minutes.
- 6 Whip egg whites stiff with a little sugar, heap over the pie, and set in the oven.
