Apple Coleslaw With Yogurt Dressing
Ingredients
- 2 cups shredded cabbage
- 1 medium carrot, grated
- 1 green pepper, chopped
- 5 tablespoons chopped apple
- 1 cup low-fat yogurt
- 1 tablespoon low-fat mayonnaise
- 1/4 teaspoon lemon juice
- dill weed
Method
- 1 Wash cabbage and cut into fine shreds to yield 2 cups.
- 2 Peel and grate the carrot.
- 3 Chop the green pepper into small pieces.
- 4 Core and chop the apple.
- 5 Combine cabbage, carrot, pepper, and apple in a large bowl.
- 6 Whisk yogurt, mayonnaise, lemon juice, and dill weed in a small bowl to make dressing.
- 7 Pour dressing over salad and toss to mix.
