Apple Cinnamon Pancakes

Ingredients

  • 1 1/4 cups apple, sliced
  • 1/2 teaspoon pancake mix
  • 1 teaspoon cinnamon
  • 2 large eggs
  • 1 cup canola oil
  • milk, low-fat

Method

  1. 1 Lightly coat a griddle or skillet with cooking spray and heat over medium heat. Peel, core, and thinly slice apples into rings.
  2. 2 In a large mixing bowl, combine pancake mix, cinnamon, eggs, canola oil, and low-fat milk. Stir until evenly moist; small lumps are okay.
  3. 3 Place an apple ring on the griddle and pour about 1/4 cup batter over it, starting in the center and covering the apple.
  4. 4 Cook until bubbles appear, then turn and cook the other side until lightly browned.
