Apple Celery And Nut Salad With Lemon Dressing

Ingredients

  • 1 tbsp Crisco
  • 1 tsp mustard
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 eggs, separated
  • 4 tbsp lemon juice
  • 1 cup whipped cream
  • 1 qt chopped apples
  • 1 pt diced celery
  • 1 1/2 cups blanched shredded almonds
  • 2/3 cup rolled pecan meats

Method

  1. 1 Mix chopped apples, diced celery, and nut meats in a bowl.
  2. 2 Melt Crisco in a double boiler. Add mustard, sugar, salt, pepper, and beaten egg yolks.
  3. 3 Cook the mixture until thickened, then stir in lemon juice.
  4. 4 Remove from heat and fold in stiffly beaten egg whites.
  5. 5 Chill the dressing, then fold in whipped cream just before serving.
  6. 6 Toss the fruit and vegetable mixture with the chilled dressing.
