Apple Celery And Nut Salad With Lemon Dressing
Ingredients
- 1 tbsp Crisco
- 1 tsp mustard
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp white pepper
- 2 eggs, separated
- 4 tbsp lemon juice
- 1 cup whipped cream
- 1 qt chopped apples
- 1 pt diced celery
- 1 1/2 cups blanched shredded almonds
- 2/3 cup rolled pecan meats
Method
- 1 Mix chopped apples, diced celery, and nut meats in a bowl.
- 2 Melt Crisco in a double boiler. Add mustard, sugar, salt, pepper, and beaten egg yolks.
- 3 Cook the mixture until thickened, then stir in lemon juice.
- 4 Remove from heat and fold in stiffly beaten egg whites.
- 5 Chill the dressing, then fold in whipped cream just before serving.
- 6 Toss the fruit and vegetable mixture with the chilled dressing.
