Apple Cake With Lemon Sauce
Ingredients
- 1 cup flour
- 1/2 tsp salt
- 1 1/2 tsp baking powder
- 1 egg-sized pat butter
- 1 egg
- 2/3 cup milk
- 4 apples
- 2 tbsp sugar
- 2 cups water
- 2 cups sugar
- 3 tsp cornstarch
- 1 tbsp butter
- 1 lemon (rind and juice)
Method
- 1 Sift flour, salt, and baking powder together. Rub in the butter until thoroughly combined.
- 2 Beat one egg with two-thirds cup milk. Stir into the dry mixture to form a batter.
- 3 Spread batter half-inch thick on a baking pan. Place four cored, sliced apples in rows on top.
- 4 Sprinkle apples with two tablespoons sugar. Bake quickly in a moderate oven (350°F).
- 5 For sauce, boil water and sugar. Stir in cornstarch dissolved in cold water until thickened.
- 6 Remove sauce from heat. Stir in one tablespoon butter and lemon rind and juice. Serve hot.
