Apple Bread Pudding
Ingredients
- 4-6 medium apples (such as Pippins), peeled, cored, and chopped
- 2 tablespoons butter
- 2-3 tablespoons sugar
- 1/2 teaspoon ground cinnamon or nutmeg
- 1 teaspoon rose water or grated lemon peel
- 4-6 slices white bread, crusts removed and cut into triangles
- 2 tablespoons melted butter (for dipping bread)
Method
- 1 Preheat oven to 300°F.
- 2 In a pan, melt 2 tablespoons butter over medium heat. Add chopped apples, sugar, spice, and rose water or lemon peel. Cover and bake until apples are very soft, about 20-30 minutes.
- 3 Remove from heat and mash the apples into a thick puree using the back of a spoon.
- 4 Butter a deep dish. Dip bread triangles in melted butter and line the bottom of the dish with points meeting in the center.
- 5 Spread half the apple mixture over the bread, add another layer of bread, then the remaining apple. Top with a final layer of bread.
- 6 Bake at 300°F for 15 minutes until golden and heated through. Serve warm.
