Apple And Cinnamon Crêpes With Orange

Ingredients

  • 6 large apples
  • butter
  • 1/2 pint milk
  • 2 eggs
  • flour
  • lemon peel, finely shredded
  • cinnamon
  • powdered sugar
  • juice of 1 Seville orange

Method

  1. 1 Peel apples, remove cores, and slice. Fry slices in butter until browned on both sides, then drain on a sieve.
  2. 2 Mix milk, eggs, flour, shredded lemon peel, and cinnamon to form a batter of medium consistency.
  3. 3 Heat butter in a frying pan. Pour in half the batter, arrange apple slices on top, and fry briefly to set.
  4. 4 Pour remaining batter over the apples. Fry until one side is brown, then flip and fry the other side.
  5. 5 Transfer to a dish, dust with powdered sugar, and squeeze fresh orange juice over the top.
