Apple And Cinnamon Crêpes With Orange
Ingredients
- 6 large apples
- butter
- 1/2 pint milk
- 2 eggs
- flour
- lemon peel, finely shredded
- cinnamon
- powdered sugar
- juice of 1 Seville orange
Method
- 1 Peel apples, remove cores, and slice. Fry slices in butter until browned on both sides, then drain on a sieve.
- 2 Mix milk, eggs, flour, shredded lemon peel, and cinnamon to form a batter of medium consistency.
- 3 Heat butter in a frying pan. Pour in half the batter, arrange apple slices on top, and fry briefly to set.
- 4 Pour remaining batter over the apples. Fry until one side is brown, then flip and fry the other side.
- 5 Transfer to a dish, dust with powdered sugar, and squeeze fresh orange juice over the top.
