Anise Almond Biscotti
Ingredients
- 1 lb all-purpose flour
- ½ lb granulated sugar
- ¼ lb sweet almonds, whole and shelled
- 1 tsp pine nuts
- 1.5 oz butter
- Anise seeds
- 5 large eggs
- Pinch of salt
Method
- 1 Preheat oven to 350°F. Cream butter and sugar, then mix in flour, anise seeds, salt, and 4 eggs to form a soft dough.
- 2 Divide dough into four flat cakes (½ inch thick). Place on a greased and floured baking sheet.
- 3 Brush tops with beaten egg yolk. Bake until set but not browned, about 20-25 minutes.
- 4 Cool completely on a wire rack for 24 hours to soften the crust slightly.
- 5 Slice cakes into ½-inch diagonal pieces. Toast slices on both sides in the oven until crisp.
