Anise Almond Biscotti

Ingredients

  • 1 lb all-purpose flour
  • ½ lb granulated sugar
  • ¼ lb sweet almonds, whole and shelled
  • 1 tsp pine nuts
  • 1.5 oz butter
  • Anise seeds
  • 5 large eggs
  • Pinch of salt

Method

  1. 1 Preheat oven to 350°F. Cream butter and sugar, then mix in flour, anise seeds, salt, and 4 eggs to form a soft dough.
  2. 2 Divide dough into four flat cakes (½ inch thick). Place on a greased and floured baking sheet.
  3. 3 Brush tops with beaten egg yolk. Bake until set but not browned, about 20-25 minutes.
  4. 4 Cool completely on a wire rack for 24 hours to soften the crust slightly.
  5. 5 Slice cakes into ½-inch diagonal pieces. Toast slices on both sides in the oven until crisp.
