Anchovy Toasts With Deviled Eggs

Ingredients

  • 2 eggs
  • 8 slices bread
  • Butter
  • Anchovy paste
  • Pimiento

Method

  1. 1 Place 2 eggs in a double boiler, cover with boiling water, and cook for 60 minutes.
  2. 2 Chop the egg whites and rub the yolks through a coarse strainer.
  3. 3 Cut bread into 4.25 by 2.75 inch rectangles, 0.25 inch thick.
  4. 4 Sauté bread slices in butter on one side only.
  5. 5 Spread the un-toasted side with anchovy paste.
  6. 6 Divide each slice diagonally into 3 sections.
  7. 7 Sprinkle the two end sections with egg yolk and the center with egg white.
  8. 8 Separate sections with narrow strips of pimiento and serve.
