Anchovy Toast With Soft Poached Eggs
Ingredients
- 1 tbsp butter
- 2 eggs
- 1 tbsp milk or gravy
- Salt and pepper to taste
- 2 slices buttered toast
- Anchovy paste or essence of anchovy
Method
- 1 Melt butter in a small stewpan over medium heat.
- 2 Add eggs, milk or gravy, salt, and pepper. Stir quickly until eggs begin to thicken but yolks remain whole.
- 3 Spread anchovy paste on buttered toast slices.
- 4 Pour the cooked eggs over the toast and serve immediately.
