  • 1 tbsp butter
  • 2 eggs
  • 1 tbsp milk or gravy
  • Salt and pepper to taste
  • 2 slices buttered toast
  • Anchovy paste or essence of anchovy

Method

  1. 1 Melt butter in a small stewpan over medium heat.
  2. 2 Add eggs, milk or gravy, salt, and pepper. Stir quickly until eggs begin to thicken but yolks remain whole.
  3. 3 Spread anchovy paste on buttered toast slices.
  4. 4 Pour the cooked eggs over the toast and serve immediately.
