Anchovy Toast With Scrambled Eggs

Ingredients

  • 2 eggs
  • 1 slice fried or toasted bread
  • 1 oz butter
  • 1 tbsp anchovy paste
  • Salt and pepper to taste

Method

  1. 1 Heat the bread until quite hot; fried bread is preferred.
  2. 2 Spread the anchovy paste thinly over the hot bread.
  3. 3 Heat butter in a frying pan until hot.
  4. 4 Break eggs into the pan, add salt and pepper, and stir quickly until they form a soft yellow mass.
  5. 5 Spread the egg mixture over the toast and serve immediately.
