Anchovy Toast With Scrambled Eggs
Ingredients
- 2 eggs
- 1 slice fried or toasted bread
- 1 oz butter
- 1 tbsp anchovy paste
- Salt and pepper to taste
Method
- 1 Heat the bread until quite hot; fried bread is preferred.
- 2 Spread the anchovy paste thinly over the hot bread.
- 3 Heat butter in a frying pan until hot.
- 4 Break eggs into the pan, add salt and pepper, and stir quickly until they form a soft yellow mass.
- 5 Spread the egg mixture over the toast and serve immediately.
