Anchovy Thickened Stewed Haddock

Ingredients

  • 2-3 small haddocks or similar fish
  • 1 quart water
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 anchovy
  • 1 bunch sweet herbs
  • 1 tbsp chopped parsley
  • Cloves or onions to taste
  • Salt and pepper to taste

Method

  1. 1 Clean the fish by cutting off heads, tails, and fins. Place them in a pot with 1 quart of water, the anchovy, sweet herbs, and spices.
  2. 2 Stew the fish for 15 minutes, then skim the surface to remove impurities.
  3. 3 In a separate bowl, roll butter into flour to create a paste. Stir this into the hot cooking liquid to thicken it.
  4. 4 Return the fish to the thickened sauce. Add chopped parsley and cloves or onions, then simmer gently until heated through.
