Anchovy Thickened Stewed Haddock
Ingredients
- 2-3 small haddocks or similar fish
- 1 quart water
- 1 tbsp butter
- 1 tbsp flour
- 1 anchovy
- 1 bunch sweet herbs
- 1 tbsp chopped parsley
- Cloves or onions to taste
- Salt and pepper to taste
Method
- 1 Clean the fish by cutting off heads, tails, and fins. Place them in a pot with 1 quart of water, the anchovy, sweet herbs, and spices.
- 2 Stew the fish for 15 minutes, then skim the surface to remove impurities.
- 3 In a separate bowl, roll butter into flour to create a paste. Stir this into the hot cooking liquid to thicken it.
- 4 Return the fish to the thickened sauce. Add chopped parsley and cloves or onions, then simmer gently until heated through.
