Anchovy Spinach Toast With Hard Boiled Egg

Ingredients

  • 1 cup cooked spinach, chopped fine
  • 1 tbsp butter
  • Salt to taste
  • 2-3 drops Tabasco sauce
  • 4 slices bread
  • Anchovy paste
  • 1 hard-boiled egg, quartered lengthwise

Method

  1. 1 Press cooked spinach through a sieve. Reheat with butter, salt, and Tabasco sauce.
  2. 2 Sauté bread rounds in butter until golden brown.
  3. 3 Spread bread with anchovy paste, then top with the spinach purée.
  4. 4 Place a quarter of a hard-boiled egg on each toast, yolk side up.
