Anchovy Spinach Toast With Hard Boiled Egg
Ingredients
- 1 cup cooked spinach, chopped fine
- 1 tbsp butter
- Salt to taste
- 2-3 drops Tabasco sauce
- 4 slices bread
- Anchovy paste
- 1 hard-boiled egg, quartered lengthwise
Method
- 1 Press cooked spinach through a sieve. Reheat with butter, salt, and Tabasco sauce.
- 2 Sauté bread rounds in butter until golden brown.
- 3 Spread bread with anchovy paste, then top with the spinach purée.
- 4 Place a quarter of a hard-boiled egg on each toast, yolk side up.
