Anchovy Scrambled Eggs With Oysters

Ingredients

  • 2 tablespoons butter
  • 1 tablespoon anchovy paste
  • 6 eggs
  • 1/4 teaspoon salt
  • dash of paprika
  • 1/2 pint oysters, parboiled, bearded, and chopped
  • toast slices, lightly spread with anchovy paste

Method

  1. 1 Cream together 2 tablespoons butter and 1 tablespoon anchovy paste.
  2. 2 Melt the mixture in a skillet, then add 6 eggs beaten with 1/4 teaspoon salt and a dash of paprika.
  3. 3 Stir and cook until the eggs begin to thicken.
  4. 4 Add 1/2 pint of parboiled, bearded, and chopped oysters.
  5. 5 Continue scrambling until done, then serve on toast slices lightly spread with anchovy paste.
