Anchovy Scrambled Eggs With Oysters
Ingredients
- 2 tablespoons butter
- 1 tablespoon anchovy paste
- 6 eggs
- 1/4 teaspoon salt
- dash of paprika
- 1/2 pint oysters, parboiled, bearded, and chopped
- toast slices, lightly spread with anchovy paste
Method
- 1 Cream together 2 tablespoons butter and 1 tablespoon anchovy paste.
- 2 Melt the mixture in a skillet, then add 6 eggs beaten with 1/4 teaspoon salt and a dash of paprika.
- 3 Stir and cook until the eggs begin to thicken.
- 4 Add 1/2 pint of parboiled, bearded, and chopped oysters.
- 5 Continue scrambling until done, then serve on toast slices lightly spread with anchovy paste.
