Anchovy Paste

Ingredients

• Anchovies
• Clarified butter
• Flour (optional, for consistency)

Method

1. 1 Pound the anchovies in a mortar until smooth.
2. 2 Rub the mixture through a fine sieve.
3. 3 Pot the paste and cover the top with clarified butter.
4. 4 Store in a cool place.
