Anchovy Herb Butter Sandwiches
Ingredients
- 12 anchovies, washed, cleaned, and chopped fine
- ½ lb butter
- Bread slices
- Fresh tarragon, chopped
- Fresh chives, chopped
- Mustard and cress, chopped
- Chicken slices, optional
- Hard-boiled eggs, sliced, optional
Method
- 1 Chop the anchovies very fine and mix with the butter.
- 2 Press the anchovy butter through a sieve using a wooden spoon until smooth.
- 3 Spread the anchovy butter generously onto slices of bread.
- 4 Top with chopped tarragon, chives, and mustard and cress.
- 5 Add sliced chicken or hard-boiled eggs if desired, then serve.
