Anchovy Herb Butter Sandwiches

Ingredients

  • 12 anchovies, washed, cleaned, and chopped fine
  • ½ lb butter
  • Bread slices
  • Fresh tarragon, chopped
  • Fresh chives, chopped
  • Mustard and cress, chopped
  • Chicken slices, optional
  • Hard-boiled eggs, sliced, optional

Method

  1. 1 Chop the anchovies very fine and mix with the butter.
  2. 2 Press the anchovy butter through a sieve using a wooden spoon until smooth.
  3. 3 Spread the anchovy butter generously onto slices of bread.
  4. 4 Top with chopped tarragon, chives, and mustard and cress.
  5. 5 Add sliced chicken or hard-boiled eggs if desired, then serve.
