Anchovy Deviled Eggs
Ingredients
- 3 large eggs
- 3 anchovy fillets
- 1 tbsp butter
- Pinch of black pepper
- Dash of cayenne pepper
- ½ tsp lemon juice
Method
- 1 Place eggs in boiling water for 2 minutes, then boil for 1 hour. Transfer to cold water to cool.
- 2 Peel eggs, cut in half lengthwise, and remove yolks. Keep whites in cold water to prevent discoloration.
- 3 Mash yolks with anchovies, butter, pepper, cayenne, and lemon juice until smooth.
- 4 Spoon the mixture back into the egg whites and serve.
