Anchovy Deviled Eggs

Ingredients

  • 3 large eggs
  • 3 anchovy fillets
  • 1 tbsp butter
  • Pinch of black pepper
  • Dash of cayenne pepper
  • ½ tsp lemon juice

Method

  1. 1 Place eggs in boiling water for 2 minutes, then boil for 1 hour. Transfer to cold water to cool.
  2. 2 Peel eggs, cut in half lengthwise, and remove yolks. Keep whites in cold water to prevent discoloration.
  3. 3 Mash yolks with anchovies, butter, pepper, cayenne, and lemon juice until smooth.
  4. 4 Spoon the mixture back into the egg whites and serve.
