  • 1 tsp mustard
  • 4 hard-boiled egg yolks
  • 4 boned anchovies
  • 4 small pickles
  • 1 tsp chives
  • 1 sprig tarragon

Method

  1. 1 Cream butter and mustard together in a bowl.
  2. 2 Press egg yolks through a sieve and mix into the butter.
  3. 3 Finely chop anchovies, pickles, chives, and tarragon; stir into the mixture.
