Anchovy And Egg Yolk Butter Sandwiches
Ingredients
- 4 tbsp butter
- 1 tsp mustard
- 4 hard-boiled egg yolks
- 4 boned anchovies
- 4 small pickles
- 1 tsp chives
- 1 sprig tarragon
- stale bread
Method
- 1 Cream butter and mustard together in a bowl.
- 2 Press egg yolks through a sieve and mix into the butter.
- 3 Finely chop anchovies, pickles, chives, and tarragon; stir into the mixture.
- 4 Spread the mixture onto slices of stale bread and press two pieces together.
