Anchovy And Egg Salad

Ingredients

  • 8 salted anchovies or 12 bottled anchovies
  • 4 hard-boiled eggs
  • 1 head lettuce
  • Juice of 1/2 small lemon
  • French dressing, mayonnaise, or sauce tartare

Method

  1. 1 If using salted anchovies, soak in cold water for 2 hours. Drain, dry, and remove skin and bones. Cut flesh into small pieces and squeeze lemon juice over them.
  2. 2 Arrange lettuce leaves on a serving dish with stalk ends at the center.
  3. 3 Slice the hard-boiled eggs and mix with the anchovy pieces. Arrange the mixture on top of the lettuce.
  4. 4 Pour French dressing, mayonnaise, or sauce tartare over the salad and serve.
