Anchovy And Caper Remoulade Sauce
Ingredients
- 1 shallot, finely chopped
- 1 tbsp parsley, finely chopped
- 2 scallions, finely chopped
- 1 clove garlic, finely chopped
- 2 anchovies, finely chopped
- 1 tbsp capers, finely chopped
- 1 tsp mustard
- ½ cup olive oil
- 2 tbsp vinegar
- 2 tbsp fish stock (cullis)
Method
- 1 Finely chop the shallot, parsley, scallions, garlic, anchovies, and capers.
- 2 Combine the chopped ingredients in a bowl with the mustard, vinegar, and fish stock.
- 3 Whisk in the olive oil slowly until the sauce is emulsified and smooth.
