Ingredients

  • 1 shallot, finely chopped
  • 1 tbsp parsley, finely chopped
  • 2 scallions, finely chopped
  • 1 clove garlic, finely chopped
  • 2 anchovies, finely chopped
  • 1 tbsp capers, finely chopped
  • 1 tsp mustard
  • ½ cup olive oil
  • 2 tbsp vinegar
  • 2 tbsp fish stock (cullis)

Method

  1. 1 Finely chop the shallot, parsley, scallions, garlic, anchovies, and capers.
  2. 2 Combine the chopped ingredients in a bowl with the mustard, vinegar, and fish stock.
  3. 3 Whisk in the olive oil slowly until the sauce is emulsified and smooth.
