Almond Topped Sweet Bread Cake

Ingredients

  • 2 cups bread sponge
  • 1 egg, well beaten
  • ½ cup sugar
  • 1 tablespoon butter
  • 1 cup tepid water
  • flour, as needed
  • 1 egg, beaten with 1 teaspoon sugar
  • granulated sugar
  • split blanched almonds

Method

  1. 1 Mix bread sponge, 1 egg, sugar, butter, and tepid water. Add enough flour to make a thin dough.
  2. 2 Let dough rise until double in size.
  3. 3 Turn onto a board, roll out an inch thick, and place in a baking tin. Let rise again until light.
  4. 4 Brush top with egg beaten with 1 tsp sugar. Sprinkle with granulated sugar and split blanched almonds.
  5. 5 Bake in a moderate oven (350°F) until done.
