Almond Topped Soda Cakes

Ingredients

  • 3 egg yolks
  • 1 ½ cups heavy cream
  • ¾ cup unsalted butter
  • 1 tsp baking soda
  • 1 ½ cups granulated sugar
  • All-purpose flour, as needed
  • 12 blanched almonds, halved

Method

  1. 1 Preheat oven to 300°F. Cream butter and sugar until light.
  2. 2 Beat in egg yolks and cream. Dissolve soda in a little water and add.
  3. 3 Mix in flour to form a stiff dough. Roll very thin on a floured surface.
  4. 4 Cut into small cakes. Place half a blanched almond in the center of each.
  5. 5 Bake in a slow oven (300°F) until set and lightly golden.
