Almond Topped Soda Cakes
Ingredients
- 3 egg yolks
- 1 ½ cups heavy cream
- ¾ cup unsalted butter
- 1 tsp baking soda
- 1 ½ cups granulated sugar
- All-purpose flour, as needed
- 12 blanched almonds, halved
Method
- 1 Preheat oven to 300°F. Cream butter and sugar until light.
- 2 Beat in egg yolks and cream. Dissolve soda in a little water and add.
- 3 Mix in flour to form a stiff dough. Roll very thin on a floured surface.
- 4 Cut into small cakes. Place half a blanched almond in the center of each.
- 5 Bake in a slow oven (300°F) until set and lightly golden.
