Almond-Topped Chocolate Macaroons

Ingredients

  • 7 egg whites
  • 3/4 lb sifted sugar
  • 1/2 lb finely pounded almonds
  • 2 oz grated Baker's chocolate
  • Wafer paper
  • 1/2 blanched almond per macaroon

Method

  1. 1 Stir egg whites, sugar, almonds, and chocolate into a paste.
  2. 2 Cut wafer paper into rounds.
  3. 3 Roll mixture pieces to fit the wafer rounds.
  4. 4 Press half a blanched almond onto each macaroon.
  5. 5 Bake in a moderate oven (350°F).
