Almond Sugar Candy

Ingredients

  • 1 cup almonds
  • 2 ½ cups powdered sugar
  • 1 tablespoon lemon juice

Method

  1. 1 Blanch and chop 1 cup of almonds. Dry them in the oven, watching carefully to prevent browning.
  2. 2 In a saucepan, combine 2 ½ cups powdered sugar and 1 tablespoon lemon juice. Heat over medium heat, stirring constantly with a wooden spoon until melted and slightly colored.
  3. 3 Remove from heat and let stand briefly to ensure the sugar is fully melted and smooth.
  4. 4 Quickly stir in the hot almonds. Do not over-stir to avoid graininess.
  5. 5 Pour the mixture onto an oiled slab. Spread into an even sheet 1/8 inch thick, using a halved lemon to press and smooth it.
  6. 6 While still warm, cut into squares or diamonds. Allow to cool completely, then break into pieces.
