Almond Sugar Candy
Ingredients
- 1 cup almonds
- 2 ½ cups powdered sugar
- 1 tablespoon lemon juice
Method
- 1 Blanch and chop 1 cup of almonds. Dry them in the oven, watching carefully to prevent browning.
- 2 In a saucepan, combine 2 ½ cups powdered sugar and 1 tablespoon lemon juice. Heat over medium heat, stirring constantly with a wooden spoon until melted and slightly colored.
- 3 Remove from heat and let stand briefly to ensure the sugar is fully melted and smooth.
- 4 Quickly stir in the hot almonds. Do not over-stir to avoid graininess.
- 5 Pour the mixture onto an oiled slab. Spread into an even sheet 1/8 inch thick, using a halved lemon to press and smooth it.
- 6 While still warm, cut into squares or diamonds. Allow to cool completely, then break into pieces.
