Almond Sherry Bread Pudding
Ingredients
- 6 small tea buns
- 2 oz butter
- 3 large eggs
- 1 ½ cups rich milk
- ½ cup blanched almonds, chopped fine
- 1 oz sugar
- 2 tbsp sherry
- Fine bread crumbs for greasing
- Butter for greasing
Method
- 1 Cut buns in half, butter generously with 2 oz butter, and reassemble.
- 2 Beat eggs with milk, chopped almonds, sugar, and sherry. Soak buns in mixture briefly.
- 3 Butter a mold, sprinkle with bread crumbs, then layer soaked buns inside.
- 4 Pour remaining custard over buns. Place mold in a pan of boiling water.
- 5 Bake in a moderate oven (350°F) for 45 minutes. Serve hot with sauce.
