Almond Sherry Bread Pudding

Ingredients

  • 6 small tea buns
  • 2 oz butter
  • 3 large eggs
  • 1 ½ cups rich milk
  • ½ cup blanched almonds, chopped fine
  • 1 oz sugar
  • 2 tbsp sherry
  • Fine bread crumbs for greasing
  • Butter for greasing

Method

  1. 1 Cut buns in half, butter generously with 2 oz butter, and reassemble.
  2. 2 Beat eggs with milk, chopped almonds, sugar, and sherry. Soak buns in mixture briefly.
  3. 3 Butter a mold, sprinkle with bread crumbs, then layer soaked buns inside.
  4. 4 Pour remaining custard over buns. Place mold in a pan of boiling water.
  5. 5 Bake in a moderate oven (350°F) for 45 minutes. Serve hot with sauce.
