Almond Rose Water Cake
Ingredients
- 10 eggs
- 1 lb loaf sugar
- ½ lb almonds
- ½ lb flour
- 1 nutmeg
- Rose water or lemon juice
Method
- 1 Beat egg yolks first, then add sugar and beat until very light.
- 2 Blanch and pound almonds with rose water or lemon juice.
- 3 Alternately add the almond mixture and flour to the egg mixture.
- 4 Fold in well-beaten egg whites.
- 5 Bake in a slow oven (300°F) for 90 minutes for one large cake, or less time for small pans, watching carefully.
