Almond Rose Water Cake

Ingredients

  • 10 eggs
  • 1 lb loaf sugar
  • ½ lb almonds
  • ½ lb flour
  • 1 nutmeg
  • Rose water or lemon juice

Method

  1. 1 Beat egg yolks first, then add sugar and beat until very light.
  2. 2 Blanch and pound almonds with rose water or lemon juice.
  3. 3 Alternately add the almond mixture and flour to the egg mixture.
  4. 4 Fold in well-beaten egg whites.
  5. 5 Bake in a slow oven (300°F) for 90 minutes for one large cake, or less time for small pans, watching carefully.
