Almond Rice Tart With Currants

Ingredients

  • 1 cup almond paste
  • 1 cup boiled rice
  • 2 tbsp cream
  • 1 tsp rose water
  • ½ cup sugar
  • ¼ tsp cinnamon
  • 2 egg yolks
  • pinch of salt
  • ¼ cup boiled currants
  • 2 tbsp butter
  • 1 sheet puff pastry
  • 2 tbsp powdered sugar
  • 2 red and white biscuit pieces

Method

  1. 1 Preheat oven to 350°F. Mix almond paste, boiled rice, cream, rose water, sugar, cinnamon, egg yolks, salt, currants, and butter in a bowl until combined.
  2. 2 Line a tart pan with puff pastry. Fill with the mixture and seal the edges.
  3. 3 Bake for 25-30 minutes until golden brown.
  4. 4 Remove from oven, ice with glaze, and decorate with red and white biscuit pieces. Sprinkle with powdered sugar before serving.
