Almond Rice Pudding With Raspberry Sauce

Ingredients

  • 1/2 lb rice
  • 2 1/2 pints milk
  • 1 oz butter
  • 3 oz ground sweet almonds
  • 12 ground bitter almonds
  • sugar to taste
  • 1 tsp cinnamon
  • raspberry jam
  • water

Method

  1. 1 Cook rice, butter, milk, sugar, and almonds until rice is tender, about 40-50 minutes.
  2. 2 Butter a mold and sift cinnamon evenly over the inside.
  3. 3 Pour the rice mixture into the mold and let it cool completely.
  4. 4 Dip the mold in hot water for 30 seconds if needed, then turn out onto a plate.
  5. 5 Serve with a sauce made from raspberry jam and water.
