Almond Ratafia Cookies
Ingredients
- 1/2 lb blanched bitter almonds
- 1/2 lb sweet almonds
- 4 egg whites
- 2 1/4 lb loaf sugar, pounded and sifted
- 9 egg whites
Method
- 1 Beat the 4 egg whites with the almonds in a mortar until quite fine.
- 2 Stir in the sifted sugar, then gradually mix in the 9 egg whites until light.
- 3 Pipe drops the size of a shilling onto parchment paper using a small funnel.
- 4 Bake in a moderate oven (350°F) until light brown.
- 5 Remove from paper immediately after cooling.
