Almond Ratafia Cookies

Ingredients

  • 1/2 lb blanched bitter almonds
  • 1/2 lb sweet almonds
  • 4 egg whites
  • 2 1/4 lb loaf sugar, pounded and sifted
  • 9 egg whites

Method

  1. 1 Beat the 4 egg whites with the almonds in a mortar until quite fine.
  2. 2 Stir in the sifted sugar, then gradually mix in the 9 egg whites until light.
  3. 3 Pipe drops the size of a shilling onto parchment paper using a small funnel.
  4. 4 Bake in a moderate oven (350°F) until light brown.
  5. 5 Remove from paper immediately after cooling.
