Almond Ratafia Cakes
Ingredients
- 1/4 lb bitter almonds, blanched and dried
- 1/4 lb sweet almonds, blanched and dried
- 3/4 lb granulated sugar
- 7 egg whites
Method
- 1 Finely pound the blanched bitter and sweet almonds with one egg white until smooth. If they become oily, add a little more egg white.
- 2 Mix in the finely pounded sugar until well combined.
- 3 Beat the remaining six egg whites well and fold them into the almond and sugar mixture.
- 4 Drop small spoonfuls of the mixture onto parchment paper.
- 5 Bake in a slow oven (300°F) until set. Let cool completely before removing from the paper.
