Almond Ratafia Cakes

Ingredients

  • 1/4 lb bitter almonds, blanched and dried
  • 1/4 lb sweet almonds, blanched and dried
  • 3/4 lb granulated sugar
  • 7 egg whites

Method

  1. 1 Finely pound the blanched bitter and sweet almonds with one egg white until smooth. If they become oily, add a little more egg white.
  2. 2 Mix in the finely pounded sugar until well combined.
  3. 3 Beat the remaining six egg whites well and fold them into the almond and sugar mixture.
  4. 4 Drop small spoonfuls of the mixture onto parchment paper.
  5. 5 Bake in a slow oven (300°F) until set. Let cool completely before removing from the paper.
