Almond Puff Pastry Tarts
Ingredients
- 6 oz sweet almonds
- 0.5 oz bitter almonds
- 1 oz rose or orange flower water
- 0.5 lb fresh butter
- 6 oz sifted loaf sugar
- Lemon peel, grated
- Cream
- 4 egg yolks
- Puff pastry
Method
- 1 Blanch almonds and soak for 30 minutes.
- 2 Pound almonds finely with rose or orange flower water.
- 3 Mix almonds with butter, sugar, lemon peel, cream, and egg yolks.
- 4 Line pattypans with puff pastry and fill with mixture.
- 5 Bake in a brisk oven (400°F) for 30 minutes.
