Ingredients

  • 6 oz sweet almonds
  • 0.5 oz bitter almonds
  • 1 oz rose or orange flower water
  • 0.5 lb fresh butter
  • 6 oz sifted loaf sugar
  • Lemon peel, grated
  • Cream
  • 4 egg yolks
  • Puff pastry

Method

  1. 1 Blanch almonds and soak for 30 minutes.
  2. 2 Pound almonds finely with rose or orange flower water.
  3. 3 Mix almonds with butter, sugar, lemon peel, cream, and egg yolks.
  4. 4 Line pattypans with puff pastry and fill with mixture.
  5. 5 Bake in a brisk oven (400°F) for 30 minutes.
