Ingredients

  • 6 oz sweet almonds
  • 0.5 oz bitter almonds
  • 2 tbsp rose water or orange flower water
  • 0.5 lb fresh butter
  • 6 oz sifted loaf sugar
  • Grated lemon peel
  • Good cream
  • 4 eggs
  • Puff pastry
  • Candied lemon peel slices
  • Split almonds for garnish

Method

  1. 1 Blanch almonds, dry them, then pound finely with rose water to prevent oiling.
  2. 2 Cream butter smoothly, then mix with almonds, sugar, lemon peel, cream, and eggs.
  3. 3 Line patty pans with puff pastry, fill with mixture, and garnish with candied peel and almonds.
  4. 4 Bake in a 400°F oven for 30 minutes.
