Almond Puff Pastry Tartlets
Ingredients
- 6 oz sweet almonds
- 0.5 oz bitter almonds
- 2 tbsp rose water or orange flower water
- 0.5 lb fresh butter
- 6 oz sifted loaf sugar
- Grated lemon peel
- Good cream
- 4 eggs
- Puff pastry
- Candied lemon peel slices
- Split almonds for garnish
Method
- 1 Blanch almonds, dry them, then pound finely with rose water to prevent oiling.
- 2 Cream butter smoothly, then mix with almonds, sugar, lemon peel, cream, and eggs.
- 3 Line patty pans with puff pastry, fill with mixture, and garnish with candied peel and almonds.
- 4 Bake in a 400°F oven for 30 minutes.
