Almond Paste Topped Crackers
Ingredients
- 1 lb almonds
- 2 egg whites
- 1 egg white
- powdered sugar
- crackers
Method
- 1 Blanch and chop 1 lb of almonds. Mix into a stiff paste with the stiffly beaten whites of 2 eggs.
- 2 Beat 1 egg white to a stiff froth. Add enough powdered sugar to create a thick icing.
- 3 Spread crackers with the icing, then top with the chopped almond paste.
- 4 Bake in a cool oven (300°F) until golden brown.
