Almond Paste Topped Crackers

Ingredients

  • 1 lb almonds
  • 2 egg whites
  • 1 egg white
  • powdered sugar
  • crackers

Method

  1. 1 Blanch and chop 1 lb of almonds. Mix into a stiff paste with the stiffly beaten whites of 2 eggs.
  2. 2 Beat 1 egg white to a stiff froth. Add enough powdered sugar to create a thick icing.
  3. 3 Spread crackers with the icing, then top with the chopped almond paste.
  4. 4 Bake in a cool oven (300°F) until golden brown.
