Almond Madeleines

Ingredients

  • 4 oz butter
  • 4 oz flour
  • 3 oz sugar
  • 1 tsp orange-flower water
  • 4 egg yolks
  • 1 lemon rind
  • 4 egg whites, well-beaten
  • split almonds for topping
  • sifted sugar for topping

Method

  1. 1 Beat butter, sugar, and egg yolks together until creamy.
  2. 2 Add orange-flower water and grated lemon rind.
  3. 3 Fold in the well-beaten egg whites last.
  4. 4 Fill buttered little moulds, top with split almonds and sifted sugar.
  5. 5 Bake in a moderate oven (350°F) for 30 to 40 minutes.
