Almond Madeleines
Ingredients
- 4 oz butter
- 4 oz flour
- 3 oz sugar
- 1 tsp orange-flower water
- 4 egg yolks
- 1 lemon rind
- 4 egg whites, well-beaten
- split almonds for topping
- sifted sugar for topping
Method
- 1 Beat butter, sugar, and egg yolks together until creamy.
- 2 Add orange-flower water and grated lemon rind.
- 3 Fold in the well-beaten egg whites last.
- 4 Fill buttered little moulds, top with split almonds and sifted sugar.
- 5 Bake in a moderate oven (350°F) for 30 to 40 minutes.
