Almond Mace Pound Cake
Ingredients
- 4 oz butter
- 1 ½ cups sugar
- 1 cup milk
- 3 ½ cups flour
- 4 tsp baking powder
- 1 tsp almond extract
- ½ tsp mace
- 5 egg whites, stiffly beaten
- 7 egg yolks (for Golden Cake variation)
Method
- 1 Cream 4 oz butter and 1 ½ cups sugar until light and frothy.
- 2 Mix in 1 cup milk, 3 ½ cups flour, 4 tsp baking powder, 1 tsp almond extract, and ½ tsp mace.
- 3 Beat the mixture for five minutes to blend thoroughly.
- 4 Cut and fold in the stiffly beaten whites of five eggs.
- 5 Pour batter into prepared pans, filling corners and leaving a slight depression in the center.
- 6 Bake in a moderate oven (350°F) for one hour until golden and set.
- 7 Cool on a wire rack before coating with plain water icing.
