Almond Mace Pound Cake

Ingredients

  • 4 oz butter
  • 1 ½ cups sugar
  • 1 cup milk
  • 3 ½ cups flour
  • 4 tsp baking powder
  • 1 tsp almond extract
  • ½ tsp mace
  • 5 egg whites, stiffly beaten
  • 7 egg yolks (for Golden Cake variation)

Method

  1. 1 Cream 4 oz butter and 1 ½ cups sugar until light and frothy.
  2. 2 Mix in 1 cup milk, 3 ½ cups flour, 4 tsp baking powder, 1 tsp almond extract, and ½ tsp mace.
  3. 3 Beat the mixture for five minutes to blend thoroughly.
  4. 4 Cut and fold in the stiffly beaten whites of five eggs.
  5. 5 Pour batter into prepared pans, filling corners and leaving a slight depression in the center.
  6. 6 Bake in a moderate oven (350°F) for one hour until golden and set.
  7. 7 Cool on a wire rack before coating with plain water icing.
