Almond Macarons With Flour

Ingredients

  • 4 egg whites
  • 2 egg yolks
  • 1/4 lb blanched almonds
  • 1 lb powdered sugar
  • 5-6 tbsp all-purpose flour
  • Extra powdered sugar for dusting

Method

  1. 1 Beat the egg whites and yolks together vigorously for one hour.
  2. 2 Grind the blanched almonds into a very fine powder to prevent oiling out.
  3. 3 Beat the powdered sugar into the egg mixture, then fold in the ground almonds and flour.
  4. 4 Spoon the batter onto parchment-lined baking sheets.
  5. 5 Bake in a moderate oven (350°F) until set, dusting lightly with sugar if desired.
