Almond Jam Cookies
Ingredients
- 1/5 lb blanched almonds, chopped
- 1/5 lb flour
- 1/5 lb sugar
- 1/5 lb butter
- 2 eggs
- 1/8 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- Jam (currant, strawberry, or raspberry) for spreading
Method
- 1 Preheat oven to 350°F.
- 2 In a mixing bowl, combine flour, sugar, cinnamon, and nutmeg.
- 3 Add butter, chopped almonds, and eggs; beat with a spoon until mixed.
- 4 Form into a dough with your hands and roll out to 1-inch thickness.
- 5 Cut into shapes, reserving scraps for decorative strips.
- 6 Spread jam on the base, top with strips, and bake for 45 minutes.
