Almond Extract Wafers
Ingredients
- 1 tablespoon all-purpose flour
- 1 tablespoon powdered sugar
- 1/8 teaspoon salt
- 1 egg white
- Almond extract
Method
- 1 Sift together flour, powdered sugar, and salt.
- 2 Beat egg white just to break it up, then mix into dry ingredients to form a creamy batter. Add almond extract.
- 3 Grease and flour baking sheets. Drop half-teaspoon portions onto pans and spread into thin rounds with a wet finger.
- 4 Bake in a moderate oven (350°F) until edges are lightly browned.
- 5 While hot, lift wafers and roll around a stick to shape. They stiffen quickly as they cool.
