  • 1 tablespoon powdered sugar
  • 1/8 teaspoon salt
  • 1 egg white
  • Almond extract

Method

  1. 1 Sift together flour, powdered sugar, and salt.
  2. 2 Beat egg white just to break it up, then mix into dry ingredients to form a creamy batter. Add almond extract.
  3. 3 Grease and flour baking sheets. Drop half-teaspoon portions onto pans and spread into thin rounds with a wet finger.
  4. 4 Bake in a moderate oven (350°F) until edges are lightly browned.
  5. 5 While hot, lift wafers and roll around a stick to shape. They stiffen quickly as they cool.
