Almond Custard

Ingredients

  • 1 pint heavy cream
  • 5 egg yolks
  • Sweet almonds, blanched and finely beaten
  • Sugar to taste
  • Bitter almonds or ratafia extract for flavor

Method

  1. 1 Blanch and finely beat sweet almonds. Combine with cream and sugar in a saucepan.
  2. 2 Beat egg yolks and stir them into the cream mixture.
  3. 3 Cook over low heat, stirring constantly in one direction, until the custard thickens.
  4. 4 Remove from heat, add bitter almonds or ratafia for flavor, and pour into cups to set.
