Almond Custard
Ingredients
- 1 pint heavy cream
- 5 egg yolks
- Sweet almonds, blanched and finely beaten
- Sugar to taste
- Bitter almonds or ratafia extract for flavor
Method
- 1 Blanch and finely beat sweet almonds. Combine with cream and sugar in a saucepan.
- 2 Beat egg yolks and stir them into the cream mixture.
- 3 Cook over low heat, stirring constantly in one direction, until the custard thickens.
- 4 Remove from heat, add bitter almonds or ratafia for flavor, and pour into cups to set.
