Almond Currant Pound Cake

Ingredients

  • 1 cup butter
  • 4 eggs
  • 3 cups Vienna flour
  • 2 cups granulated sugar
  • 1 cup almonds, chopped
  • 1 cup currants
  • 3 oz candied peel
  • 1 tsp almond extract
  • 1 cup milk

Method

  1. 1 Preheat oven to 350°F. Beat butter until creamy.
  2. 2 Gradually mix in sugar. Beat eggs and milk together.
  3. 3 Stir egg mixture into butter. Add flour and mix.
  4. 4 Fold in almonds, currants, candied peel, and almond extract.
  5. 5 Pour into pan and bake for 1 hour until golden.
