Almond Citron Shortbread Cookies
Ingredients
- 1/2 pound butter, beaten to a cream
- 3/4 pound sugar
- 3 egg yolks, beaten light
- 1/2 cup cream
- 2 ounces almonds, chopped very fine
- 1/2 teaspoon almond extract
- A little fine cut citron
- 1 pound flour
- 1 teaspoon baking soda
Method
- 1 Beat butter to a cream, then add sugar and beat until combined.
- 2 Mix in beaten egg yolks and cream.
- 3 Stir in chopped almonds, almond extract, and citron.
- 4 Sift flour with baking soda and mix into the dough.
- 5 Roll out dough, cut into small round cakes, and bake until light brown.
