Almond Caramel Shell With Whipped Cream
Ingredients
- 1/2 lb almonds
- 1/4 lb lump sugar
- 1 tsp lemon juice
- Butter for greasing
- Powdered sugar for decoration
- Pistachios for decoration
- Preserved fruits for decoration
- Whipped cream for filling
- Fresh strawberries or preserved fruits for filling
Method
- 1 Blanch 1/2 lb almonds, cut into shreds, and dry in a slow oven (300°F) until light brown.
- 2 Caramelize 1/4 lb sugar lightly in a saucepan, stirring with a wooden spoon until dissolved.
- 3 Add hot almonds and 1 tsp lemon juice to the caramel; mix well.
- 4 Pour mixture into a buttered mold, pressing a thin layer against the sides while hot.
- 5 Remove shell, decorate with powdered sugar, pistachios, and preserved fruits.
- 6 Fill the shell with whipped cream and fresh strawberries or preserved fruits.
