Almond Caramel Shell With Whipped Cream

  • 1/2 lb almonds
  • 1/4 lb lump sugar
  • 1 tsp lemon juice
  • Butter for greasing
  • Powdered sugar for decoration
  • Pistachios for decoration
  • Preserved fruits for decoration
  • Whipped cream for filling
  • Fresh strawberries or preserved fruits for filling

Method

  1. 1 Blanch 1/2 lb almonds, cut into shreds, and dry in a slow oven (300°F) until light brown.
  2. 2 Caramelize 1/4 lb sugar lightly in a saucepan, stirring with a wooden spoon until dissolved.
  3. 3 Add hot almonds and 1 tsp lemon juice to the caramel; mix well.
  4. 4 Pour mixture into a buttered mold, pressing a thin layer against the sides while hot.
  5. 5 Remove shell, decorate with powdered sugar, pistachios, and preserved fruits.
  6. 6 Fill the shell with whipped cream and fresh strawberries or preserved fruits.
