Almond Bavarian Cream
Ingredients
- 1 pint heavy cream
- ½ lb sweet almonds
- 1-2 drops almond extract
- 4 oz granulated sugar
- ½ oz gelatin
- 3 eggs
- ½ pint milk
- few drops orange flower water
Method
- 1 Soak the gelatin in the milk.
- 2 Blanch and pound the almonds, adding a few drops of orange flower water to prevent oiling.
- 3 Beat eggs and milk lightly together, then strain into a jug.
- 4 Add sugar and almonds to the egg mixture.
- 5 Place the jug in a saucepan of boiling water and stir until the custard coats the spoon.
- 6 Melt the gelatin and add it to the warm custard.
- 7 Whip the cream to stiff peaks and fold in the almond extract.
- 8 Once the custard is cool, stir it into the whipped cream.
- 9 Mix well and pour into a wetted mold.
